From rice-based everyday meals to highland specialties and coastal seafood, Malagasy cuisine reflects the island’s diversity.
Rice at the center
Rice is central to Malagasy meals and is served with laoka: vegetables, meat, fish or legumes prepared in many regional styles. Romazava, a warming meat and leafy-green broth, is among the best-known dishes.
Regional flavors
Highland cooking often features vegetables and zebu, while coastal areas offer fish, crab, coconut and tropical fruit. Street snacks such as mofo gasy make an easy introduction to local flavors.
Eat with confidence
Choose busy restaurants and freshly cooked dishes, drink safe water and tell your guide about allergies in advance. Markets are excellent for discovering seasonal produce and learning how ingredients are used.
